Trying to create code that selects part of a cell and does a strikethrough

The cell includes: 1 <-old-|-new-> 2

With this I can select the length from 1 to 2:

However, how do I select start 1 to right before the "<-old-|-new->"

Once I have that I will then delete "<-old-|-new->"

Thank you for your help. Im a beginner trying to figure this out.

The reason why I need to get the data between start 1 and <-old is because the size of the data between that can change.

Error handling would be needed in case the '<' does not exist.
