Is there a way I can stop a user adding or widening columns without locking the spreadsheet??
I've seem other spreadsheets with limited number of columns, how is this put in place??

Two separate questions ...
1. Protect worksheet
2. Hide unwanted columns ...
Sorry:
1. I didnt want to protect the worksheet.
2. Hiding the columns won't stop a persistent user unhiding them.
Any other suggestions?

If you are after a lot more sophistication (and difficulty), you can get into manipulating Excel's menu in order to prevent user from getting to the various commands related to your objective ...

If you hide the unused columns e.g say Col H to IV then go
Tools > options > View tab > untick rows and column headers most general users wouldn't know what you have done....
