How to write code that will automatically delete data from an established drop down list

I have a form that I have created and would like to make this usage if it as easy as possible for the end user. As the user selects individuals from an established drop down list, I would like the name selected in the drop down list to disappear once thee users has clicked a submit button. This way, the end user will know exactly how many people they have left to select. If this possible? I see that this is something that is possible in Access, but I need to keep this in Excel to match the rest of my data analysis information.
