Outlook Message Format Messes Up When Including a Signature

Please see the attached file, it was easier putting the information in an attached file than trying to paste it into this text box,

The question –

How I can get it so when I include the signature in the message, rather than the text being formatted like:

Hi – is in Times New Roman Size 12
Can you please provide a POD/ Delivery Note or an ETA for the attached POs. - is in Calibri (Body) 10
Thank you – is in Calibri (Body) 10

The text is formatted like:
Hi – is in Times New Roman Size 12
Can you please provide a XYZ/XYZ or an XYZ for the attached XYZs. – is in Times New Roman Size 12
Thank you” – is in Times New Roman Size 12
