How do I format a number so it is an absolute value, meaning without any minus sign or parenthese? I would like to present absolute numbers and percentages without signs.

you can put =ABS(A12) and so for all numbers...
or you can Format cells -> Numbers and choose where negative number is present as red without -
And then you can sellect collor for all numbers red and you got it
Never use Merged Cells in Excel

Percentages
0%;0%
To change the actual value use the ABS formula
