Perhaps you can use all dates and then filter them by only showing the days you want? See the attached for an example.

No this is not homework, this is for my personal organization so I can keep track of what classes were cancelled or missed or missed assignments etc... Is there no simple function that allows customization of what weekdays to omit and show ?
For example, here is my sample worksheet. I have created a list of dates from Jan 7 to Feb 10, 2014. I want all weekdays except thursday in that time period
