Chart conditional formating

1. Where and how to define parameters for “Format data series” in order to remember them whenever change the schedule of data series "Filling machine schedule"? For example, the next schedule (DAY 2) of filling machine is in different order, but series colour on chart needs to be returned when the name of data series is written.
2. How to edit pop up automatically to provide information about start and end time for every each data series? On the chart these information is provided manually for lemon juice.
