Are you saying spread out across three cells you have the day, month, and year and you want all of this in one cell? When you change one of those variable the date will update?
If so,
=DATE(C1,B1,A1)
C1 = Year
B1 = Month
A1 = Day

Not too clear on what you are working with. If you place =TODAY() in the three cells and then custum format
the first one as dddd
the second as mmmm
the third as yyyy

substitute commas with semi-colons if your region settings requires
