Simple timesheet spanning midnight with minutes total

If you have 21:00 in A2 and 03:00 in B2 then the formula that zbor suggested will give you the result 6:00 - is that what you need?

Note that those times are entered with colon between hour and minute - that's the way you need to enter them if you want Excel to recognise those as times.
