headers, too many fields defined, has no named ranges

man I am a contractor NOT a whiz at this so please treat me as stupid and explain in detail, I will not take offense just long as I get clear understanding. I been using word, excel for long time, maybe 10 years but not even close to what is caple of. Now im getting more into the features of what this can do.
My goal is to take a excell database of names, numbers of my clients and merge them into outlook(2007 trial). I can do this the old fashioned way and take a few weeks of my spare time(which I dont have) and manually put them but I really like to save time and learn how to sucessfully do this.
Outlook and excel is from a office 2007 trial. I know basics of importing and such as I have done so sucessfully(not from excel) but from one computer to another(officexp) Since office xp is no longer supported I am basically forced to upgrade so im trying to learn this 2007 which is WAYYYYYYYY different in alot of ways. First problem is when I imported my pst file from xp it imported them but in a list. It did not keep them in the respected folders and now they are all jumbled. I never had this issue when importing from xp to xp, the folders stayed in their rightful place. second problem is the merging of info from excel to outlook. I did google and found similar problems but im just not getting the idea of how. one site on the problem was no named ranges, so I selected my info and put in a random name saved as xls, went to import and still has problem of no named ranges, so I dont know. so then there was another suggestion save as csv. so I did that and I thought AWESOME it works! well so i go to the import where I checkmark the import blah blah and then click map custom fields... so far so good. Well it kinda works but im limited on what I can save!!! only options are
    subject
    body
    from
    from
    from
    to(name)
    to(address)
    to(type)
    cc(name)
    cc(address)
    cc(type)
    bcc(name)
    bcc(address)
    bcc(type)
    biling info
    categories
    importance
    mileage
    sensitivty

It will work if i snap these however my fields are more than that, I have
    first
    last
    street
    city
    state
    zip
    cell phone
    home phone
    email

    and several others,

Im stumped and its been 3 days I been working on this, searching, finding, trying, fustrating, banging all in that order
