rotating 12 hour schedule shared with 3, one weekend off monthly

I have 3 people and need each of us to have 60 hours a week...with only one
working on each shift at a time. We need alternating weekends once a month
or so. Any suggestions?

To start with, if "only one working on each shift at a
time" then there are only 168 hours available per week.
But you have specified 180 hours per week.

That said, try the following for starters

Copy A3 down
B3> =IF(B2="","day",IF(B2="day","night",""))
Copy B3 to C3 and D3
Copy B3:D3 down 3 rows (to Friday 3/4)
B7> =B6
Copy B7 to B7:D8
Copy B3:D3 to B9:13
Copy B7:B13 (a whole week) down as far as you want

This gives each employee at least one three day weekend
per month.
