Auto populate a previous date after midnight but before 3AM

Hello,

I use the simple formula =NOW() ot get the current date.

But is it possible to show the previous date if the time is anytime after midnight but before 3AM?

Basically I want a printed form after midnight and before 3am to show the previous date.

Not sure if this is possible.
