To calculate and plot changing percentage fields

Feel I should be able to handle this one but my head's in a tiz...

Attached is a straightforward list of staff who will attend one or more of four courses. They'll attend as they are able to, so dates attended will be added daily (I have given them week numbers for now. Feel free to delete).

There's a target of 85% for each staff group to attend a course. I need to show a progress table and a graph to show numbers and percentage attended going up towards that figure as the dates get filled in next to names; and numbers and percentage of people remaining going down.

I've tried to go pivot table (as you'll see I've tried) and pivot chart but had trouble making sense of percentages from my pivot table. This is a MacOS Excel

Any help very appreciated.

Perhaps this will qualify and "any help".
A helper column (% Trained) is added to the table on the Source sheet and populated using: =IF([@Week]="Not trained","",SUMPRODUCT((F$2:F2<>"Not trained")*(A$2:A2=[@Course]))/COUNTIFS([Course],[@Course]))
The pivot table on the PT sheet utilizes the % Trained column in the Values field.
