Create 100% stacked bar chart based on date and multiple variables in single column

Hello! I am running into difficulties creating a 100% stacked bar chart with my dataset. I know how to create the chart if I manipulate the data using a pivot table, but ideally I would be able to create the same stacked bar chart using my original data export.

Dataset (3 columns)

Date Variable Value
October X 100
October Y 200
October Z 150
November X 150
November Y 205

I want the x-axis to be the month and the bars to show the % of month total for that variable. Is it possible to get this stacked bar chart without manipulating the data into a pivotable with variables in the column and dates in the top row?

Let me know if need any clarification. I have attached a sample spreadsheet showing how my data exists, and the end chart I would like to get from it.
