It's not quite clear if the Excel file you emailed to your phone is opening in a generic preview that the iPhone provides natively, or if the file actually opens in Excel for iPhone, which is an application you can download in the Apple Store.
In the generic preview, with no Excel installed on the phone, you can just see the Excel grid. You can't make any changes. Macros will not run and data validation dropdowns don't work.
With Excel for iPhone there are a few more things you can possibly do but they depend on your Excel license.
- if you don't have a Microsoft account, you can view the workbook but not edit it.
- if you do have a Microsoft account and sign in with your Microsoft account and password, you can edit existing workbooks on your phone and create new workbooks. They can be stored in the OneDrive that comes with your account, or stored on the phone.
- if you have an Office 365 license you can use few additional features on the phone, like styling stuff.
In all cases, Excel mobile is intended for light editing, not for fully fledged workbook development. If you can edit a workbook, data validation dropdowns will work. VBA Macros are not supported on Excel for iPhone and will not run.
