I am using Excel for Mac and in my workbook the filter icon in the ribbon menu became greyed out. I cannot figure out how to make it accessible again (but I can still use filters in my table). The sheets are not protected or grouped in any way. Also, I cannot access the formula drop down in the total row at the bottom of my table. Excel does not allow me to change the formula to SUM,MIN,MAX. Any suggestions as to how to solve this would be appreciated.

Sounds to me like your data is text. Even if it looks like a number, it is probably still text looking like a number.Excel does not allow me to change the formula to SUM,MIN,MAX.
Pick a cell with a "number" in it and use this in an empty cell to test...
=isnumber(cell-ref)...if it comes back as FALSE, then that is text and we will need to convert it
