I've changed it in settings, but how do I go about the existing workbook?
Microsoft-support-site says it doesnt apply to existing workbook - I can change it manually, but as soon as I change some values via formulas, the values become Calibri again!

Unless you have Conditional Formatting that is changing the font,or using VBA code that changes the Font in some part of the code I cannot see why Formulas would be changing the font from what you have selected.

Default font only applies to NEW workbooks. If you want to change what is displayed in an existing workbook, select all the tabs in the workbook (click on the first tab, hold down the Shift key and click on the last tab). Click on the rectangle above the row numbers and to the left of the column headers. This will select the entire worksheet. Select the font that you desire. Right click on the tabs and UNGROUP. Save the workbook. When you re-open the workbook the font should be what you changed it to.
Conditional formatting will only change font Style (not font), colour, underline and strikethrough.
