complex data into organised table?

hello,
I have been provided with some chemical anaylsis data in the following format: date / analysis type / value
There are 20 different types of analysis
Not each analysis is done on the same day, some are, some aren't
So for some analysis, I have hundreds of dates (and therefore hundreds of lines of data), for others I only have a few (and these dates may not be replicated in other analysis)
There are over 12,000 lines of data
I would like to turn my data into something that looks like this:

DATE_______ANALYSIS 1________ANALYSIS 2________ANALYSIS 3
1/1/00______0.4____________________________________________
2/1/00______0.7_______________334_______________3_________
3/1/00________________________340_______________4_________

how can I go about this? (excel 07)
I've tried pivot tables, but cant get it to just give me the values, it wants to tell how many values I have, so I get a load of 1's and 0's instead.
Any advice greatfully recieved.
