Cell Formatting Not Saving

Hello, if anybody could please help me with this I would really appreciate it.

When I open Excel, numbers or "general" format cells with numbers in them turn into currency with the Euro sign in front of them whenever I open the sheet. When I change the cell format from currency to number, the format sticks while the document is open, although when I close and reopen the document the cells go back to the currency format.
