Are sum cells possible with letters instead of numbers?

I'm familiar with writing basic numeric formulas but is it possible to write an equation which takes into account representative letters? I'm producing a time sheet for work. The table has a row per day of the week and one of the columns records P for present, A for absent, H for holiday and N for Not working. I would like to total the number of times each of these letters appears in the column so that I can summarise at the end of the week that there have been x days holiday taken, x days absence etc. Is this possible? Thanks for any help in advance.
