Need to count records for specific days and times

I need to count records between two dates by the day and by the hour, i.e. Between 1/1/11 and 3/31/11 count records for all Sundays between 00:00 and 01:00. Date format is: 1/1/2011 2:02. See attached for example. Thanks in advance for any help!
