    Put the numbers in two separate cells, subtract normally, and format the result as [h]:mm
          ---A---- ---B--- --C-- ----D-----
      1   11:00 AM 9:00 PM 10:00 C1: =B1-A1
    If you want to do it in one cell (but why?), you can enter it as ="9:00 PM" - "11:00 AM"
