Try this:
=IFERROR(C7-B7,0)+IFERROR(E7-D7,0)
and this:
=SUM(F7:F37)
All yellow cells need the custom format: [h]:mm:ss

On the Jan2021 Sheet, in cell F7 try: =SUM(MOD(C7-B7,1)*24+MOD(E7-D7,1)*24) and pull down.
Make sure the cells are formatted as Number/Accounting (not date/time).
Please note, the calculation will be incorrect in the OUT time is missing.
We would have to add some validation, which could make the formula a bit more complex.
A simpler process is conditional formatting. Column E will highlight, if there is an IN value but no OUT value. You can replicate for the other columns if required.
