Hello,
I need to use an excel spreadsheet and select a drop down list that I have created (data validation > list > source)
When I open the excel on my ipad the length of the dropdown list does allow me to see all the item (refer screenshot)
Would you know how to fix that?

That's an iPad UI issue - not sure there's anything you can do about it.
