I'd like to take a 10 digit number, 2222222222, & have it display as a phone number, 222-222-2222. Is there a formula for this? I don't want to convert an entire column, just a single cell in one of my invoice templates.

Try
=TEXT(A1,"000-000-0000")
I'm not using Excel 2003 but think this should work:
Custom format the cell as 000-000-0000 then when you enter 1111111111 it will show as 111-111-1111 when you exit the cell.

You can use formatting to display the number as a phone number.
Select the cell in question
Right click>Format Cells>Special>Phone Number
