Coding Edge lists in Excel

My boss just came to me today, threw a pile of data at me and told me to compile an edgelist. I have two questions.

What is an edgelist?

and

How can I use excel to create one?

I've been surfing the internet but I can't seem to find any simple, basic information that thoroughly answers those two questions. =(
