Simple filter problem: Unable to filter for column headers.

Hello, for the life of me I cannot figure out how to re-arrange or setup my data so I can create a pivot table and filter it based on the names/categories I have entered into the column headers.

If someone could have a look and provide some feedback I would be really grateful. I feel like it should be a simple problem and I'm missing something super simple.
