Sheet 4 – I would like the graph to return positive numbers only. The raw Data has to remain as negative in the Daily Data tab.

Charts don't "change" the data they are based on. If you need the chart to be based on real positive numbers, then I think you will need a calculated field in your pivot table (or a helper column outside of the pivot table) that converts the negative numbers to positive numbers. I don't use pivot tables, so I don't know the best way to do this.
A number format code like 0;0 will not display the minus sign "-" as part of the number, so that negative numbers look like positive numbers. Note how the second section that applies to negative numbers does not include the minus sign "-" (help file describing number format codes: https://support.office.com/en-us/art...2-09fab54be7f4 ). You could use a number format to "hide" the minus sign, but you must realize that the actual value Excel is seeing is still the negative value.
Beyond that, I don't think I can suggest anything without a better idea of what you are trying to do.

You could simply add two calculated fields to reverse the sign of the numbers- e.g.
= -'Variance Qty'
