Not sure if it's possible, but are you able to set up a pivot table so that values are summarized by 'Sum' for each line item, but the subtotals (and grand total) are the averages of that summed data.
Hoping it is so that I don't have to continuously copy/paste the pivot data/formatting, and manually edit subtotals/grand total

Unfortunately not - the average would be of all the underlying data for that tests entry, not of the two id subtotals in the subordinate field.
